Preparation:

Mix 1 cup of buckwheat pancake mix and 1 1/2 cups of water for pancakes, or mix 1 cup of buckwheat pancake mix and 1 cup of water for buckwheat waffles. It's a good idea to prepare extra batter in advance because the first pancake often doesn't turn out perfectly.

Whisk the water and mix until you have a smooth and consistent batter.

Heat a pan with a touch of butter over medium heat, using about 1/4 cup of batter for each pancake. Flip the pancakes when you see bubbles forming on the surface.

To achieve perfectly crispy waffles after each batch, lightly brush the cooking surface of the waffle iron with oil.

Grate, thinly slice, then distribute them on the buckwheat pancakes and/or waffles.

Remove the buckwheat pancake/waffle from the pan and, to taste, add pecans and honey.
